You will need: Flour, Brown Sugar, Salt, Butter, Oats, Baking Powder, Lemon, and Sweetened Condensed Milk
Grease an 8x11 pan
Cream one stick of butter
Add 1 cup of brown sugar. In Portugal they actually call it yellow sugar - it's lighter than brown sugar.
Add 1 cup of oatmeal
Add salt and baking powder
Mix in the flour
Put half the mixture in the bottom of the greased pan. Press firmly. Save the remaining mixture for the topping
Now the yummy part - the lemon filling. We decided to use fresh lemons but you could also use lemon juice.
You'll need the zest from 1-2 lemons.
Pour in the sweetened condensed milk and mix it all together
Pour the lemon mixture over the crust - be sure to lick the spatula and bowl when you're done (You can't waste any lemony goodness!).
Sprinkle the remaining topping over the lemon mixture - don't pat it down.
Now you're ready for the oven. Bake for about 20 minutes at 350 or until golden brown
Cool for 30 min and then refrigerate for a few hours till chilled (the flavor is better when the bars are cold...we sampled both ways!). While you wait here's what you have to look forward to - the hazards of cooking :O)
But it's worth it. The final product was quite delicious!

- 1 can (14 Ounce) Sweetened Condensed Milk

- Zest Of 1 Lemon
Preparation Instructions
PREHEAT OVEN TO 350 DEGREES.Mix butter and brown sugar until well combined.
Sift together flour, salt, and baking powder.
Add oats and flour to butter/sugar mixture and mix to combine.
Press half of crumb mixture into the bottom of an 8 x 11 inch pan.
Mix together condensed milk, lemon juice, and lemon zest. Spread onto the bottom layer of the crumb mixture. Top with the other half of the crumb mixture, but don’t press.
Bake for 20 to 25 minutes, or until golden brown.
Allow pan to sit on counter for 30 minutes after baking. Cut into squares and refrigerate for a couple of hours or until cool.
Serve cool.
